Little known Captain Jonathan Carnes had big dreams as a sea-faring merchant. In 1795, Captain Carnes took his ship, the Rajah, and set sail from Salem, MA for Sumatra, which was rich in wild pepper. He came back eighteen months later with over 140,000 pounds of pepper. He sold this at a 700 percent profit, and helped to kick-start the American spice trade! This black pepper and garlic sauce is a tribute to him and his brave journey.
